Ingredients

boneless chicken thighs
or breast, diced

15 oz chickpeas, drained & rinsed

14 oz diced tomatoes

onion
chopped
2
garlic cloves
minced

red bell pepper
sliced
1
tsp
cumin
1
tsp
paprika
½
tsp
turmeric

tbsp
olive oil
Salt & pepper
to taste
Fresh cilantro or parsley
for garnish
Instructions
Heat olive oil in a large pot over medium heat.
Add onion, garlic, and bell pepper; sauté until softened.
Stir in cumin, paprika, and turmeric; cook until fragrant.
Add chicken; cook until lightly browned.
Add chickpeas and tomatoes; simmer 15–20 minutes.
Season with salt, pepper, and garnish with herbs before serving.
Notes
This recipe works with either chicken thighs or breast. For a vegan version, swap chicken with cauliflower or tofu.
