Ingredients

heavy cream

large egg yolks

granulated sugar

vanilla extract or vanilla bean paste

Instructions
Preheat oven to 325°F (160°C).
Heat cream gently until warm, not boiling.
Whisk egg yolks, sugar, and vanilla until smooth.
Slowly pour warm cream into egg mixture, whisking continuously.
Strain and pour into ramekins.
Bake in a water bath for 30–35 minutes until just set.
Chill at least 2 hours.
Sprinkle sugar evenly on top and torch until caramelized.
Dust lightly with edible gold before serving.
Notes
The crack of the caramelized top represents breaking through the old and revealing a deeper, richer season ahead.
