- 2 tbsp medium sweet potatoes peeled and diced
- 6 tbsp large eggs pasture-raised preferred
- 1/2 cup unsweetened almond milk
- 1 tbsp small red onion diced
- 1 cup spinach or kale
- 1 tsp ground cinnamon
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 1 tbsp extra virgin olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Toss the diced sweet potatoes with olive oil and spread them evenly on a baking sheet.
- Roast the sweet potatoes for 20 minutes until just tender.
- In a large mixing bowl, whisk together the eggs, almond milk, cinnamon, sea salt, and black pepper.
- Transfer the roasted sweet potatoes to a greased baking dish and add the red onion and spinach or kale.
- Pour the egg mixture evenly over the vegetables.
- Bake for 30–35 minutes, or until the center is set.
